Creamy Salmon with Sun-Dried Tomatoes and Spinach

Ingredients:

- 4 salmon fillets

- 1 tablespoon olive oil

- Salt and pepper to taste

- 2 cloves garlic, minced

- 1/2 cup sun-dried tomatoes, chopped

- 2 cups fresh spinach leaves

- 1 cup heavy cream

- 1/2 cup grated Parmesan cheese

- 1 teaspoon dried thyme

- Fresh parsley for garnish

Instructions:

1. Season the salmon fillets with salt and pepper on both sides.

2. Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the salmon from the skillet and set aside.

3. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 2-3 minutes, until the garlic is fragrant and the tomatoes are softened.

4. Add fresh spinach leaves to the skillet and cook until wilted, stirring occasionally.

5. Pour in the heavy cream and grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth.

6. Sprinkle dried thyme over the sauce and stir to incorporate.

7. Return the cooked salmon fillets to the skillet, nestling them into the creamy sauce. Cook for an additional 2-3 minutes, allowing the salmon to heat through.

8. Garnish with fresh parsley before serving.
